Silvereye, Sydney

Silvereye degustation

This is one of the best degustations we have ever had and unfortunately Sam Miller (formally sous chef at Noma) has gone back to England and so Silvereye came to a close back in August. We were lucky enough to get a reservation the week before closing and we are so happy we did. Everything was perfect; the personal greeting by all staff and chefs at the door, the sommelier’s wine pairings, the waiters commentary and service, the food – oh the food!, the personal tour of the kitchen at the end of our dinner.

I will let the photos sing for themselves and I won’t go through every dish but the general consensus between Stephen and I was a general earthiness, dedication to local produce and authenticity. I’m sad to see this go but will definitely follow Sam Miller and see his future develop.
